Culinary Arts Program

The Culinary Arts Program is completely ladderized where students can upgrade from a 5-month study on the fundamentals of culinary arts leading up to the 2-year Diploma on Culinary Arts and Patisserie.

Baking and Pastry Arts Program

The Baking and Pastry Arts Program is a 10-month program covering 450 hours of classroom and kitchen work, plus 300 hours of industry practicum.  Upon completion of all the requirements, the student is awarded a Certificate in Baking and Pastry Arts.

SHORT COURSES AT PSCA RESERVATIONS MAY BE MADE NOW

Commissary Cooking
This is a culinary workshop module with limited hands-on. This course is specially designed for cooks/chefs/food technologists/ nutritionists currently working or about to start commissary

Topics included are:
Menu and standardized recipes
A brief review of preparation and cooking methods.
Guidelines for preparing food in quantity
Increasing recipe yields
Production process flow and critical points for quality issues, cost issues and safety issues for each type of dish in the menu
    Quality control procedures
    HACCP procedures
    Cost Control procedures
Packaging and storage

Chilling and freezing guidelines Transport guidelines
Guidelines for receiving and storage at outlets
Reheating/cooking at store outlets

Course Duration 10- halfday or 5 whole day sessions (40 hours)
Course fee: PhP 20,000.00
Min of 5 participants to open the course . The maximum no of participants in each class is 15

Ericson Jann Velayo (Batch 8)  is Executive Chef of Diamond Suites and Residence located at   Apitong Street corner Escario Cebu City.

Lani Garcia  (Batch 8, Certificate in Culinary Arts)  who did further studies in baking and pastry  arts at ISCHAM is the LMG Pastry CHEF, who makes delectable  pastries  and beautiful wedding cakes by order.
